Ingredients:

1 tri-tip
1 teaspoon salt and pepper 
¾ teaspoon granulated garlic powder
40 corn tortilla chips
1 1/8 cups refried beans
2 cups cheddar cheese, shredded 

1/2 cup black olives, sliced

Sour cream, guacamole, and salsa to serve 

Directions:

1.     Preheat oven to 425 degrees. Line a baking sheet with foil. Rub tri-tip with salt, pepper, and garlic powder on both sides. Roast for 35-40 minutes. Remove from the oven and let rest, covered for 10 minutes. 

2.     Dice half of the tri-tip across the grain into small, bite-sized pieces. 

3.     Lay chips flat on a baking sheet. Spread 1 tsp. of refried beans on each chip. Sprinkle with cheese. Add 2-3 pieces of tri-tip.

4.     Place baking chips into the oven to melt the cheese, about 10 minutes. Remove and add 1 sliced olive on each chip. Serve with sour cream, guacamole, and salsa. 

Serves 6.
